FINALLY - Blackened Fish Tacos!

  
Blackened Fish - for Tacos!
1 tbs. chopped dehydrated onions
1 1/2 tbs paprika
1 tbs garlic powder
1 tsp sea salt
1/2 - 1 tsp black pepper (to taste)
1/4 tsp cayenne pepper
1/2 tsp leaf thyme
1/2 tsp leaf oregano

Crush dehydrated onion with the back of a spoon. Mix all the spices together.

For Fish:
5 tilapia fillets
1 tbs oil
cast iron skillet

Rub each fillet with seasoning on each side. Pour oil in skillet and heat to medium or medium/high heat depending on your stove top. Skillet should get hot but not so hot your oil smokes. Cook each fillet for 3 minute on each side. My skillet is small, so I do 2 at a time. I add a little more oil between batches (1 tsp?) to prevent sticking. Serve on corn tortillas with toppings of your choice - we haven't progressed beyond salsa, sour cream and cheese but I think a crunchy slaw would be super tasty.
